RIDGE GOURD THORAN

Ridge gourd is a soft vegetable and other name of this veg. is sponge gourd. I decided to make a thoran with this ridge gourd.

PROCESS

Ingredients
Sponge gourd and crushed ingredients cooking in a tawa
Ready to serve

INGREDIENTS

  1. 1 cup thinly chopped ridge gourd
  2. 1/2 cup grated coconut
  3. 1 green chili chopped
  4. 1 garlic clove
  5. 1 onion thinly chopped
  6. Pinch turmeric powder
  7. Salt to taste
  8. 2 tbsp vegetable oil
  9. Pinch mustard
  10. 2 spring curry leaves

METHOD

  1. Crush the coconut, chili, garlic and turmeric then keep aside.
  2. Heat the oil and add mustard then sputter and add curry leaves.
  3. Add chopped onion and crushed coconut mix then saute in a low flame for a while.
  4. Then add chopped sponge gourd and salt and stir a little.
  5. Close with lid and allow to cook in a low flame. Stir inbetween. In Just 5 minutes it will be ready to serve.
