BONDA is found in every tea shops in Kerala. It is also a traditional snack in Kerala. One BONDA is enough for one person, because it is shaped like a small cricket ball. I did this with wheat flour and ripe plantain.
THINGS WE NEED FOR THIS BONDA
- 2 cup wheat flour
- 2 cup ripe plantain chopped
- 3/4 cup grated coconut
- 1/2 cup sugar
- 1 cup milk
- 1/4 tsp yeast
- pinch salt for taste
- oil for fry
Add Yeast in a little warm with 1/2 tsp sugar for fermentation.
Mix wheat flour, chopped plantain, grated coconut, sugar then mix with milk.
Then add fermented yeast and a pinch of salt. Keep it for 3 to 5 hours for fermentation. Fermentation depends on climate . After five hours it will be doubled in size.
Heat the paniyaram with vegetable oil. Roll the dough with oil or water in palm. Add the balls in the oil. Simmer the flame or else it will be burn.
This bondas are usually made in tea shops with a lot of oil. But in home I do it in this way.
