MEXICAN RICE

Today I am sharing the preparation of Mexican rice. I got this recipe from a book.

 

 

1cup basmati rice

                                                                              1 large onion chopped fine

2 onion sliced fine

1 large capsicum

1 cup cabbage shredded

1 large tomato chopped

3 pods garlic chopped

1 tsp soy sauce

1 tsp chili powder

7 tbsp oil to fry

Salt to taste

METHOD

Wash rice and soak for 10 to 15 minutes. Heat 2 tbsp. oil in a vessel and saute the onion chopped fine along with garlic for about 2 minutes. Then fry the drained rice for about 2 minutes and cook with enough water and salt.

Heat oil in a heavy pan and fry the sliced onion till crisp. Remove and keep aside.

 

In the same oil, fry the shredded cabbage for about 2 minutes till it is cooked and remove.

 

 

Then put in the capsicum diced

 

Saute for 2 minutes and add the tomatoes and keep stirring till it is cooked.

 

 

Finally add 1 tsp. soy sauce,1 tsp chili powder, salt and mix well.

Add all the fried vegs. and half the sliced onions to the rice and mix well.

 

 

Garnish with remaining fried onions and serve hot.
