KERALA STYLE CHICKEN ROAST

Kerala style chicken roast is our ‘nadan kozhi ularthiyath’

Ingredients of this amazing recipe:-

For Marination

1 kg cleaned medium sliced chicken

2 tsp chili powder

2 tbsp corriander powder

2 tsp gingergarlic paste

2 tbsp curd

1 tbsp cornflour

1 tsp coconut oil

Salt to taste

Add all ingredients and mix well in a vessel. Marinate for 1/2 an hour.

INGREDIENTS FOR GRAVY

3 tbsp coconut oil

2 spring curry leaves

1/2 cup shallots chopped

3 onion sliced

2 green chilly slitted

Salt

1/4 tsp turmeric powder

1/2 tsp chili powder

2 tsp corriander powder

1/2 tsp pepper

1 tsp garam masala

2 tomatoes chopped

 

1/2 part of the coconut for blending and to squeeze the first milk.

METHOD OF COOKING

Heat the pan to pour 3 tbsp coconut oil in it and let the curry leaves  sputter.

After this add sliced shallots, onion, green chili then saute a while, then add all powders one by one.

Add marinated chicken and stir at high flame for 2,3 minutes.

Then close with a lid and cook in a simmered flame. Saute it  ocassionally

Pour squeezed concentrated milk of coconut and stir two three minutes when it becomes thick remove from the fire.
