ASH GOURD HALWA (KUMBALANGA HALWA)

img-20181202-wa0048-1354682621.jpgAsh gourd is good for people suffering from nervousness. It Originated in Asia specifically Java and Japan.

One of our neighbour gifted us ASH GOURD (KUMBALANGA). I am making an HALWA with this. This HALWA is commonly used in Udupi Mangalore for their festivals and celebrations.

Halwa preparation is obviously time consuming as it take the time in evaporating the oozed water.

Prep : Easy

Time: 45 Minutes

WE NEED

1 ash gourd

1 cup bread crumbled

1 tbsp ghee

3 tbsp sugar

1 tbsp cashew nuts

1/2 tbsp raisins

1 tsp cardamom powder

If needed little olive oil

METHOD OF COOKING

First we have to peel

and grate the ash gourd.

Then heat ghee in a pan to fry cashew nuts and raisin.

When it is cooked, remove from the fire and keep aside.

Add the grated ash gourd in the same pan to saute for two three minutes then add sugar in it.

It will take time for evaporating water from the melon.

Wait another five minutes for cooking,

Then add crumbled bread in the ash gourd.

This crumbled bread adds advantage as it takes less time to thicken. If needed more greesiness spray little olive oil in it.

And add cardamom powder, cashew nuts and raisins.

Enjoy this ASH GOURD HALWA and get chewy taste of the ash gourd.
