In malayam we call this vegetable Koorka and chinese potato in English, I thought of many other names for this super delicious veg , it is one of my favourate veg dishes. Guys I like this veg taste too much. But cleaning of koorka is a little difficult. This veg has stain so we have to clean and put it in the water. Koorka is rich with CALCIUM, IRON and lot of VITAMINS.
1 cup cleaned and sliced chinese potato
1/2 cup sliced onion
1 tsp ginger garlic paste
1 tsp chilly powder
1/2 tsp pepper powder
1/2 tsp garam masala powder
Pinch of turmeric powder
Salt for taste
3 spring curry leaves
2 tbsp oil
METHOD OF COOKING
Cook Koorka in a pan with one cup of water. When it becomes half cooked add all ingredients above except oil, onion and curry leaves.
After cooking, take another pan then heat and pour two table spoon of veg. oil or coconut oil, then add curry leaves and let it sputter
when it sputters add sliced onion saute for a while
then add cooked chineese potato.
We have to wait and saute them for another three to four minutes in a simmered flame. When it becomes dry remove it from the fire. Tasty mezhukkupuratti is ready to serve.
