Amarathus ( spinach) is full of antioxidants such as VITAMIN A AND E, PHOSPHEROUS, NITRATE, POTTASSIUM. And it also has folate and C VITAMIN in this leafy vegetable.
Today I cooked it as a THORAN.
Preparation – Easy

Serving – 4
1 cup chopped spinach
1/2 cup grated coconut
1 onion and 1 green chilly chopped
Salt to taste
1 tbsp oil
2 shallot chopped
1/2 tsp mustard
Heat the pan and pour oil in it then add mustard then let it sputter. After sputtering add chopped shallots and saute it into a golden colour then put the amaranthus, coconut, greenchilli, turmeric and salt. Mix it well and stir it for a while and close with lid to cook in a reduced fire.
In between saute the ingredients and close it.
After the moisture is absorbed remove it from the fire. Only five minutes time needed for cooking this.
Enjoy with boiled rice and pickle.
