PURAN POLI

Puran poli originated in India. A recipe of bobbattu is mentioned in Manucharitra.

It is a traditional sweet food prepared in most house holds during any significant occasions and festivals like Holi, Shravan Mahu, Diwali etc in Maharashtra. Puran poli is made from channa dal, split yellow gram, plain flour and wheat flour. Toor or dal also used in Karnataka and Tamil Nadu as well.

Jaggery or sugar, cardamom powder, nutmeg, ghee and water are used in this sweet.

DIFFICULTY – EASY

TIME – 30 TO 45 MINUTES

I did it this way.

INGREDIENTS

1 cup split yellow gram

1 cup wheat flour

11/2 cup all purpose flour

1/4 tsp turmeric powder

3/4 cup sugar

2 tbsp grated jaggery

2 tbsp oil

2 tbsp ghee

2 tbsp nutmeg syrup

1 tbsp cardamom powder

Salt

1/2 cup rice flour.

PREPARATION

Knead wheat, all purpose flour and turmeric (for coloring) into dough by adding and a tbsp of oil. Keep aside.

Yellow gram cooked in pressure cooker until soft. Drain excess water, Then add cooked gram, sugar, jaggery in a pan cook until the moisture evaporates.

Add cardamom powder, nutmeg and grind the mixture into a smooth paste.

Knead the dough and make lemon sized balls.

Dot with oil and make a depression and fill it with the dhal sweet mix..

Seal and reshape into balls.

Roll out the balls like chappathis sprinkled with rice flour.

Fry in a hot tawa and smear it with ghee.
