SOUTH INDIA’S HEALTHY BREAK FAST

We have to prepare our food from what we have around us and our garden or vegetable patch

IDLI

It is not only the healthiest Indian breakfast, its the most healthier world breakfast. Only 39 calories are contained in one idli. Not fat and no cholesterol. Idli should be cooked in healthy method to enjoy its benefits

3 cup raw white rice

1 cup urad dal

1 tsp fenugreek

  1. Wash all above ingredients and soak with water for 6 to 8 hours.
  2. After the soaking grind urad dal with funugreek with water into a smooth batter.
  3. Add the soaked rice in the blender to blend with enough water, when it becomes smooth add one cup of cooked rice for softening and blend.
  4. Pour the urad batter and rice batter to mix with a little salt for taste.
  5. Keep aside one night or 6 to 8 hours for fermentation.

Boil the steamer and fill the batter in the dig by 3/4. After 5 to 7 minites idli will be ready to serve.

 

Sambar is the best combination of idli. Earlier I have shared the recipe of sambar. Today I am serving my break fast with three type of chutneys. Mint Chutney Curryleaves and corriander Chutney, Onion Chutney.

MINT CHUTNEY

Mint is a great appetizer and it promotes digestion. It also smooth stomach ingigestion or inflamation. Mint leaves help to deal with nausea and head ache.

PREPARATION

1/2 cup grated coconut

5 spring mintleaves

1 small green chilli

Salt

1 tsp oil

1/2 tsp mustard

2 chopped shallots

Grind coconut, mint, green chilly, salt altogether. Heat the pan with oil and let the mustard, curry leaves to sputter, then add the shallots saute a minute and pour it into the chutney.

CURRY LEAVES AND CORRIANDER LEAVES CHUTNEY

Both curry leaves and corriander leaves are full of VITAMINS and MINERALS and has benefit of dietary fiber.

1/2 grated coconut

1/2 cup curry leaves and corriander leaves

1/2 green chilli

1/2 inch ginger chopped

Salt

1 tsp oil

1/2 tsp mustard

2 shallot chopped

1 spring curry leaves

 

PREPARATION

Blend coconut, leaves, green chilli, ginger, salt with little water. Heat the oil and sputter mustard then shallots to saute in a golden and pour it into the chutney.

ONION CHUTNEY

Onions fights cancer, lower blood sugar, reduce inflamation and allergies, fight to acne ….

1 large onion finely chopped

1 small piece of ginger chopped

1 tsp chilli powder

1 garlic clove

2 tbsp tamarind squeezed

Salt to taste

2 tbsp oil

Pinch sugar

PREPARATION

Heat the tawa in a medium flame with two table spoon oil and add the chopped onion, garlic and ginger then saute it when it becomes golden, add red chilli powder, then pour the tamarind juice, salt and if need water add little and balance the taste with a pinch of sugar. If needed to soften the texture grind the mixture into a blender to a smooth and thick paste.

An excellent break fast ready to serve.
