Benefits of Ladies Finger and Potato

Ladies finger high levels of vitamin A, B,C. Prevent Diabetes. Traces of zinc and calcium, make it an ideal veg. to eat during pregnancy. It contains fiber and folic acid. Potatoes have excellent source of vitamins and minerals, contain antioxidants etc..

Ladies finger and onion chopped
Potato cut into cubs
Sliced ginger, garlic, green chilly and curry leaves
Corriander powder, pepper powder, garam masala
Coconut milk

Ladies finger 1/4 kg, Onion 1, Ginger 1/2 tsp chopped, Garlic 1/2 tsp chopped, Green chilly 2 nos slitted, Corriander powder 1 tbsp, Garam masala 1/2 tsp, Curry leaves 1 spring, Coconut milk 1 1/2 cup,Coconut oil 2 tbsp, Salt for taste.


Slice Potato into cubes and cook with enough water. Keep aside.Cut Ladies finger with one inch in rounded shape.

Heat the pan with oil and add the mustard to sputter, add curry leaves, green chilly, gingergarlic, and onion. Saute it for one minute then put the ladies finger and stir for two to three minutes add the corriander powder, pepper, garam masala saute together for a while and add the cooked potato and salt with half cup of water. Add the sqeezed second milk of the coconut. Allow to cook for 2, 3 minutes. Then pour 1/2 cup first milk.
