Vattayappam is Kerala’s own steamed rice cake. It is common in Christian communities of Kerala. Vattayappam is basically rice and coconut grinded together and fermented with yeast. I am using rice powder for making Vattayappam. It is very soft and slightly sweet.
It is very easy to make. It is usually made for tea time. This is a healthy steamed traditional snack .
Rice powder 11/2 cup
Grated coconut 1 cup
Instant yeast 1/2 tst
Cardamom powder 1 tsp
Sugar 1/4 cup
Salt 1/2 tsp
Raisins 1 tsp
Oil to greese
Make a porridge with three table spoon of rice powder.
Allow it to cool. Blend the coconut finely. Add the yeast and a little sugar in a 1/4 cup of warm water. Put the rice powder and yeast into the rice porridge and mix finely, then add sugar, blended coconut and salt till it reaches a thick consistency. Pour If water is needed.
Wait for 2 or 3 hours for fermentation. Add cardamom powder to the mix, then pour the batter in a greesed round container with raisins.
Place it into the the hot steamer and cook for fifteen to twenty minutes. You can insert a tooth pick to check if it is cooked.
Cut it while it is still hot and serve it along with tea.
