Non of have cholesterol. High sources of nutrients. Vitanin A , C, Folic acids in it. Vegs. containing potassium. All type of vegetable adding in aviyal.

Ingredients

  • Cut the vegetable in equal length.
  • I using potato, carrot, plantain, brinjal, cucumber, drumstick, beans, long peas, 1 small beet root for colouring
  • Mango cut into six long pieces for sour, 3 green chilly

Grated coconut 2 cup

Cumin 1 tea spoon

Turmeric 1/4 tea spoon

Salt for taste

Curry leaves 2 sprin

Coconut oil 3 table spoon

Mustard 1/2 tea spoon

  • Crush the coconut, cumin, pinch turmeric and keep aside.

Cooking method

  • Vegefiretables, a pinch turmeric, 1 spring curry leaves cook with 1 and 1/2 cup of water and salt.
  • Mango do not add with vegetables.
  • When half cooked, add mango longly cut six pieces into it.
  • Add crushed ingredients into the vegetable and mix well.
  • Then crush pinch cumin, mustard, 1 spring curry leaves add it into the vegs.
  • saute well.
  • Finally pour coconut oil in it and saute well. Remove from fire.
