In Kerala we are making theeyal with many types of vegetable. Today I am going to make the theeyal from bitter gourd.It Controls diabetics and blood sugar and prevent asthma. If you get any chance try it my friends. It is good for your health and treats your taste buds to a special treat.
Bitter gourd sliced – 1 cup
Onion – 1 medium
Green chilly – 1
Grated coconut – 1 1/2cup
Red chilly – 2 nos
Small onion – 6 nos
Corriander seeds – 2 table spoon
Tamarind – lemon size
Curry leaves – 3 stem
Oil – 2 tbp
Salt – for taste
Heat a kadai and add coconut, red chilli, corriander seeds, 3 small onion chopped, 2 stem curry leaves to golden brown and grind well then keep aside.
Heat oil in a pan and shallow fry bitter gourd, sliced onion,and green chilli. Squeeze the tamarind and pour into the pan and salt. Let it take 2 minutes to cook in reduced fire. Add grinded coconut mix and enough water into the pan then stir well. Then remove from fire.
Pour oil for heat add mustard to sputter, chopped small onion and curry leaves. Saute and pour it into the theeyal.
